If you like your fish, visit the fish markets occasionally or enjoy a spot of sushi, then chances are you've heard of hiramasa kingfish.

It's widely touted as one of the best fish for sushi, and is a breed bandied about from here to the local chippie.

But do you actually know anything about it or why it's so popular? Hiramasa is the Japanese word for the yellowtail kingfish species, according to Head, and in Japan it is highly prized as a superb sashimi fish.

This was super fresh and delicious. I just thawed in a water bath, removed the skin and covered it in ponzu, jalapeno and garlic crisps on a cold plate.

The hiramasa was excellent. Very fresh. Perfect for making sushi and sashimi. My whole family loved it! I just defrosted and it was perfect. I've also baked it "yellowtail collar" style, and it was fantastic.

Am back to buy more now! Took a chance not knowing what it was. This is sashimi grade yellowtail.

After I thaw it, I soak it in a lukewarm saltwater bath for 3 minutes to bring back the briny ocean flavor and remove any fishy flavors that may be there.

I then sear it or serve it raw w the best ponzu or soy sauce I can buy. It is so fresh! I cut the fish into two fillets and sliced one into bite sized morsels to eat right away.

The white meat was slightly pink, much like papio. I could tell from handling the meat that it was leaner than the farmed hamachi. I could feel very little fat or oil on my hands.

I dipped the end of the sashimi into the shoyu and did see a small oil sheen form on the surface so there was obviously some fat in the meat.

The texture was definitely like hamachi. Compared to papio, it was softer than white and omilu but very similar to yellow spot.

The perfect texture for sashimi. I would say the fattiness of the hiramasa was also similar to yellow spot, although I recently had one from deeper and colder waters that was a little fattier than this hiramasa.

The flavor was distinctly hamachi without its sometimes overpowering oiliness. I was surprised how great its flavor was, even though it contained less fat than hamachi.

I have to say, I really enjoyed the Hawaiian hiramasa and its unique characteristics. Research shows that the Yellowtail Kingfish is ideal for mariculture programs because it is robust and hardy, fast-growing and, most importantly, tastes great.

Hiramasa has pale pink flesh with firm, large flakes and a sweet, rich flavor. Hiramasa has a higher fat content, firmer texture and cleaner flavor than wild Yellowtail Kingfish Amberjack.

The Japanese have been culturing similar species for decades and the kingfish is very much sought after for the sashimi market.
